Can someone please clear this up for me as I have been unable to find the answer. I know you can reduce you daily rest from 11 to 9 three times a week. I have been told that if you have a day off in the middle of the week this resets your time. So if I work Mon, Tues and Wed 04h00 to 18h00. Then day off Thurs. Can I reduce rest on Fri and Sat again as I have had the Thurs off. Also does the reduced time have to be paid back.

NOT 3 times per WEEK but 3 times between any two weekly rests
That means any period of 24 or more hours off will reset the 3 reduced daily rest rule
You only need to pay back if that weekly rest is the reduced being used for that week so if you have two weekly rests in the same week then only one will need paying back unless one of them is a regular 45+ rest
Example
work mon to fri = week 1
off sat + sun = regular weekly rest for week 1
work mon tue wed - all reduced daily rests = week 2
off thu = extra reduced weekly rest - no payback needed
work fri sat - all reduced daily rests = week 2
off sun mon = regular weekly rest for week 2
