From the outset I only intended to buy the one truck, which I would drive myself, but I wanted a margin on the off-chance that I was offered some lucrative contract in the future.

This hasn’t happened and it’s unlikely that it will, but the margin is there if it ever does, and it didn’t cost any more to apply for a three-vehicle licence than a one-vehicle licence. I would have applied for a larger licence if I could, but I could only meet the financial requirements for a three-vehicle licence without having to borrow money, which I didn’t want to do.
