I was wandering, once i get my class c / c&e licenses if there was much chance of me getting just weekend driving jobs with an agency to supplement my current income and gain experience rather than trying to jump straight into it full time straight away?

In theory it is possible but unfortunatly the drivers hours laws mean you would only be able to do 1 day every other weekend.
Although not driving, your “day” job still counts as “other work” for the purposes of tacho rules
As you dont say where you are you could go to your nearest Good Testing Station & pick up the
Drivers Hours & Tachograph Rules for Goods drivers in the UK & Europe ( GV262 think it still is that )
This is free btw
But as Semtex say you can only drive 1 day in a fortnight due to these rules
