I will be doing regular pickups from saxby road and wondered if anyone could let me know where would be safe to park up for the night in melton mobray.

yes it is, but i find that one of the security guards can be a bit arsey though, il be parked for a long time but like to get out and walk about into town etc.
You use to beable to park by the market lorry parking.
You can park round the back of Halfords or the big Tesco! Probably not at this time though! 
Go up Dalby road past the swimming pool. The old Airfield at the top is massive and used to be the home of two haulage firms. There’s loads of space.
Once you go past the swimming pool, just keep going for roughly 2 miles, the place is on the right
