Yes.
But even on trunk runs, especially nights, it’s not the same 5 days a week thanks to people running into each other, breakdowns, roadworks etc. It’s still nothing like most 9-5 jobs where you can guarantee exactly what you’ll be doing, the time you take your lunch, the time you’ll be finishing at any random date in the future and barring sickness or covid closing down your workplace it’ll happen that way.

You don’t always do the same run week in, week out. You maybe in a say 4 job rota ie: different run each week, or, you maybe a reserve where you pick up “spare” runs when drivers are on holiday or jobs/runs that aren’t covered etc. However, everything is done on seniority.
Personally I wouldn’t focus on details, most of the time these type of questions don’t have a single correct answer, they’re just looking for you to respond with a generally positive attitude, something to show you’re amenable to ‘going with the flow’. Naturally they’re looking to weed out those drivers (and there are plenty about) who’ve got the “I’m not doing that” approach.
Here’s one to bear in mind which does have a single correct answer: I once got a start doing council bin wagons because the exasperated transport supervisor, who’d just been dropped in it by a nervous newbie, asked me point blank, “Are you a confident driver?” Anything other than a short, sharp “Yes” wouldn’t have got me the work.

It’s all modern management bull crap mate, so just tell them what they want to hear.
Along the lines of…
‘‘I look forward to and enjoy new challenges. They give me an opportunity to use my initiative to sort out day to day problems to the best of my ability preferably without having to consult the traffic office first to do it for me.
It all comes down to teamwork in the end, and helping the company to run an efficient service to their customers’’.
Or words to that effect to impress them, however cringeworthy . 
In other words complete and utter ■■■■■■■■
