I’ve had car licence since 2001, now do I need to do a test for 7.5t in order to then progress for a c licence or does c include everything rigid from car to 32ton?

Just do the C test.
Go straight for cat C and you will automatically get cat C1 (7.5t) when you pass the cat C test.
