I worked 56 hours one week and 34 hours the next week. All perfectly normal. Is it normal practice for companies to average out the weeks to 45 and so not pay overtime??
Either way I need to find a new employer.

Depends on what your contract says.
If your on salary yes,if your paid by the hour no!
I’m in salary and get paid for 48hrs every week,some weeks I do 50+hrs some I do under 40hrs but I know after 26wks I’ll be under 48hrs so I’m happy with that.
If I was paid by the hour though if expect to get paid accordingly every week.
I’m garrenteed 48 hours pay but over time is payed hourly
I am salaried no matter what I work
I’m salaried, some weeks work out at 32 hours, some weeks as much as 52, over the year i average 43 hours (including 11 overtime shifts).
Its all quite normal on salary but suggest you keep a diary of your hours actually worked minus your statutory 45 minute daily rest periods, ignore POA (we don’t use it at all) and any breaks in the calculation other than the basic 45 a day.
The company’s tally of your hours worked can at some places vary from reality, keeping your own record is sensible to avoid being taken for a ride.
ie 11 hour day is 10.25 hours actually worked.
15 hour day is not 12 hours total worked after 2 hours break and 1 hour POA, its a 14.25 hour shift for hours worked calculation.
