I don’t recognise any of those names myself, i think that many of them may well have disappeared. A lot of the old nationals through France are now bypassed by Autoroutes. Worse than that, many are weight limited for transiting trucks, so we can’t even use them to get off the Autoroutes for a W/E. There are others who might be around at the W/E who have been around there for a lot longer than me. They might be able to give you more info on your old haunts, having used them themselves.
Local weight limits in France do not apply to vehicles accessing local services this also includes restaurant facilities 
.
This was proven in a court case in France last year when the Gendarmes in Hendaye tried to stop the drivers going to the routiers restaurant in Hendaye and the restaurant owner argued the case out in court and won.
I’ll bare that in mind Vasco’, but we still need to know where the places worth going to are. You can’t just turn off, onto a weight limited road, hoping to find a good routiers restaurant.
I always have my map, open at the right page beside me. When I see a routiers, I mark my map, for another time when I could be looking for somewhere to stop. When I am able to (memory after a good night 
), if I am given info on a good place to stop, I mark that on the map as well. Hearing about places tho’ is not the same as driving past and trying, I prefer to rely on my own experiences, what suits me might not suit you and vice-versa.
The people who were on the Nationals years ago will know where the old favoured places were, but newer guys like me won’t. The old places, once they are by-passed, don’t get as much custom as they used to partly because the timing gets all wrong. Places that used to be 4 or 9 hours, or so away from a border are now only 3 or 6 for eg, so we rattle on straight past. We don’t use them, many others don’t either, when they don’t get the custom they close.
Do you know any of the places Fred was asking about? Are they still operating? Have they changed owners and/or names? Do you know about any of the other places which he might have missed out in his list?

Many of the old Routiers are still around, A lot of french drivers still use them although they will stop and have a meal and carry on rather than stay all night.
A lot of abnormal loads and escorted loads still have to use the nationals. They are either too wide for the peages or are banned from the autoroutes.
And in my experience the best ones to stop at are the ones with lots of French trucks outside and not the ones with all the Brit trucks.

Several years ago I joined Les Routiers European, from Belgium. I then discovered a slight difficulty, it is very difficult to pay the fee. As they, obviously, have a Euro account, I have to pay £20 to transfer a £30 fee from my UK account 
. They also have a big list of truckstops throughout Europe.

that now work for swiss express they tell me that due to 3.5 ton restrictions these old truck stops are no longer there. and if traveling to swiss they have to use the auto route to strassbourg and not come off at nancy through baccarat

Can’t help with all the names you mentioned but just before I retired as a French Trucker 18 months ago I visited the Bakehouse at St. Cyr east of Macon on the N79 (leave the A40 at gate 3). It was still going but hardly thriving (this was before the Blanc reopened) but if enough old hands remember it perhaps it has revived now.
Brought back many happy memories when you mentioned Baccarat. That restaurant was something wasn’t it? First found it travelling in convoy with my late brother back in about 1980. We were running aluminium blocks (3 for 20t) from S.Wales to Neuf Brisach and were getting desperate for a meal when we found this completely blacked out village with 2 lines of trucks the whole length. Found a couple of spots and set out on foot till we found one house with a lit window. Inside was like the tardis, a happy chattering throng at the long tables tucking in. That was definitely marked on our maps!
