Having done Three, Vodafone and O2 over the last few years they’re all much of a muchness. They’ll all have the odd spot where there’s no coverage but it’s usually well out in the middle of nowhere.
For value for money Smarty is the one to go for. They use Three’s network and normally the 30GB and unlimited calls/texts for £10 a month is the best for most people but currently they have a sale on with 50GB, unlimited calls and texts for £12 a month or unlimited everything for £15 a month, both on a one month rolling contract so you can change plan or leave at any time.

My work phone is EE, my own phone is O2. Both have oddsppts where the is no coverage, often not at the same time.
So then it becomes a question of who does the best tariff for you.
As a fully licenced radio amateur, blackspots for signals are nothing new to me. Mobile phone networks are no different, as they work on the same principal. Don’t take any notice of their coverage maps as they bear no real reflection on what they actually DO cover.
it’s like saying Kenwood is better than Yaesu, but while the equipment might be all singing and all dancing, once it goes into the ether, it’s at the mercy of the elements into how the signal gets there.
Pick a tariff that suits your pocket, and bear in mind that a lot of the smaller suppliers, ie: Smarty, GiffGaff etc, are usually owned by the big ones anyhow, it’s just that they give you access on a budget, but they will give priority to their own branded name if the network clogs up.

Being similarly licenced and aware that’s why it doesn’t bother me either and the drop outs are where I’d expect. Slightly off topic, I’ve got a Yaesu FT3DE that has a bandscope. Jesus do the electronics in a DAF spew out some crap on 2m, especially when you get near the middle of the dash and around that collision detection camera they have bolted to the windscreen.
