Depends which bit of the island your on,i used to go alot never saw any proper truck parking but never had any problem parking.In the winter you can park in car parks round the coast never to far from food.
Not been there for a few years now, and never knew of any truck stops, but as said plenty of places to park.
As long as I can find somewhere to park that’s the main thing, I’m usually self sufficient, last time I went I was about 5 so can’t remember much.
