Is there any where in plymouth he likely to see any fish trucks ?
Like ports picking up fish ect ect

Not Plymouth but fish is collected daily IIRC from Looe

The fish market in Plymouth is at Lockyers quay just off Sutton road. They have a few wagons in there on and off.
