The tacho software will show you drove/or didn’t as the case my be for other places on previous dates, as far back as your card will show. A typical card can hold months worth of data, often a year plus amount of data. And as said the pass date on your licence will be checked by most companies as well.
You can’t lie about the length of holding your licence or recent driving experience. Some companies/agencies do have stipulations about X number of days driving done in the last 12 months as well.

Download is the process of handing over your card at an interview and they put it in their machine to read it, so it has everything up to date.
Your card can hold the past several years of data.
