he didn’t seem concerned about them not being fixed to the wall at least.

I know what you mean, but the pallets are square, I think they’re 1m x 1.2m so if you turn that pallet it wouldn’t fit properly.
I did see a wine rack in a cafe made of cut down pallets.

Bet it needed a lot of smoothing down from rough sawn to take the paint. A lot easier to use a piece of offcut chipboard or MDF - and a better end result if im honest. The guy has considerably more spare time than me, that
