I get paid 7-4 whatever I work and last week I did 3 days starting at 8, 8, and 10am so I’ve written time sheet out as starting at 7 but wrote above that start time was 8 or 10 and my run sheet tacho and debrief all match up accordingly. My supervisor who has to sign it as one of the days is 16.5 hours and says what I’ve done is wrong and that I should shorten it to 15 hours and add the extra on to this weeks. But that will mean that I have false records should I get audited by vosa surely?? Who is right me or him??

I assume that the day shows 16.5 hours only because of you booking on from 07:00 instead of 10:00 and that you really were able to comply with the daily rest requirements.
If the company records were checked and they saw that you’d been paid for 16.5 hours on one day there could be some questions to answer, writing the real starting time on your time sheet may be OK for you but it may not be so easy for the company who will likely be keeping records on a computer database or spread sheet type program, I’ve worked on agency for companies that would not consider signing for more than a spread-over of 15 hours.
There’s nothing illegal about being paid for 16.5 hours as long as you’ve actually had the required daily rest within the 24 hour period but it could lead to awkward questions and more intensive checks.
You won’t be in trouble with VOSA for falsifying records as you really did start at 08:00 and 10:00, the fact that you get paid from 07:00 is irrelevant as far as the regulations are concerned.
There’s nothing wrong with what either of you say but your supervisor is simply trying to keep the records looking clean and tidy in order to stop any unnecessary questions that’s all

I would imagine this could lead to a problem if there is any incident that may involve VOSA. they do and will use any other corroborating evidence such as clock cards, fuel receipts, parking tickets, weighbridge dockets or security logs, delivery notes and anything else they can find.
If you are paid 0700 till 1600 regardless. I would ask the company how they want it recorded, as long as you get paid the same, does it really matter?
