When finishing duty in NI, do you put it on uk or Ireland?

Only regions in Spain are required to be entered on a digital tachograph.
They have so many public holidays,so will fine you for driving on a truck ban.
No need to enter NI ,just leave as UK.

Northern Ireland is part of the UK so leave the end country as UK.
