There is no such thing as days which are countable for driving. It’s not days that limit the amount of driving you can do in the fixed week, only the weekly and fortnightly limits of 56 and 90 hours respectively.
Between weekly rest periods you can do 6x24 hour periods and it may be that you do no driving in some of those periods but they would still be taken into consideration when calculating when your weekly rest must be taken and would limit the number of driving days you would have in the week.
Also, depending on when and how much weekly rest you take it is possible to legally drive on all seven calendar days in the fixed week, so there is no 5.5 or 6 day driving limit.
According to my theory test book you can drive 6 days but you must be within 90 hours over 2 weeks.

Your theory test book is both wrong, and out of date, or at least that’s what it sounds like. You can drive on all 7 calendar days in the fixed week provided you take a weekly rest period as required. For example you could drive on each day from Monday to Saturday, finishing at say lunchtime Saturday. You could then take a reduced weekly rest of 24 hours and resume work at lunchtime on the Sunday, thereby driving on all 7 days in the week but remaining legal having satisfied the weekly rest requirements.
There is indeed a 90 hour fortnightly driving limit but since April 11 2007 there has also been a weekly limit of 56 hours. If you book doesn’t mention the weekly limit it is out of date and will be missing some other important changes to the regulations introduced in April 2007 and you shouldn’t rely on its accuracy.
