Medical done and just waiting for my licence to come back from DVLA… Do I have to pass my theory tests before I book my LGV driving lessons ect?

Hi and welcome to the form.
You can’t do anything till you have your provisional licence. The norm is to complete the theory tests and then move on to practical training. There again, the norm is a short block of lessons often completed in a week with a test at the end.
As the test cant be booked until the theory tests have been passed, it’s probably not sensible to start lessons beforehand.
But it is a good plan to visit trainers and have assessment drives to find out the differences between trainers/vehicles.
