Last time i was doing Turkey in 95.
Two borders Evsoni Greek/Turkey
Kapicula Bulgaria/Turkey
Visa any embassy i got mine in Sofia Bulgaria. If you can try and run with 2 passports!
Turks liked hard currency used to be DM(German) and US dollors. I would be inclined to take US & Euros
Transit tax payed on the border!
You could go via Italy but look into it the boats used to be more than going overland Ancona- Izmir

the visa I would suggest you get sorted before leaving, they’ve gone pretty strict on the requirements and it has taken me as much as two weeks, that’s in estonia though.
the transit tax is as the name refers a transit tax, so if you’re not transiting turkey, you don’t have to pay anything on top of the usual border-crossing fee, under 20ytl iirc. when transiting with a permit, not a cemt logbook, it can be pretty expensive, kapikule to sarpi (ge) and back was around €750 a year ago
no ATMs on or anywhere near the border, the closest one to kapikule is in edirne, ca 20km and try getting out of the border zone when not finished with customs, it’s a pretty expensive exercise
