As above you really need to clarify a bit more the exact details of the operation.

Basically unless you are a farmer, builder etc. there is no real escape from tachographs if you’re using a 3.5t vehicle gvw tow vehicle. There is a persistent internet idea that solely lpg powered vehicles are exempt, for general busjness use, but it is only up to 50km radius and solely gas propulsion could cause its own problems.

The most payload for least aggro in any scenario is a dual purpose qualifying vehicle with a tachograph you would essentially get close, or exceed, the payload of a 7.5 tonner if it was a pick-up with its own 1t payload as well. Fifth wheel trailer as discussed would be an option and potentially carry two cars. Suspect the trailer would need MOT-ing as over 3.5t though.
