Is it possible to do sat morning, 06.30am till 9am, have 48 hours off every week on top of doing Mon to Friday, or can I only do every other Saturday ?

Providing your weekend break reaches at least 45 hours then yes it’s possible to work every weekend as you describe.

It’s 45hrs so could finish at 12:00 on Saturday for a 09:00 start on Monday

To thinking, other people finish around 18.00 on Friday (possibly earlier) and don’t return to work until Monday 09.00.

The word day (or shift) is not mentioned in the regs
You can quite legally work 365 days a year (or 366 in leap years)
